Banana Zucchini Bread with Chopped Walnuts
We made this eggless bread with ripe bananas and fresh zuchinni with a coarse grate. We added chopped walnuts and used only whole wheat flour and raw Turbinado sugar. It's a dense bread, wonderful with herbed whipped cream cheese. Raisins could be added, dates or dried cranberries.
2 bananas mashed
2 cups Turbindado sugar
1 cup oil
2 teaspoons vanilla
3 1/2 cups whole wheat flour
1 1/2 teaspoons baking soda
3/4 teaspoon baking powder
1 1/2 teaspoon salt
2 to 3 teaspoons cinnamon
2-3 cups unpeeled zuchinni (large zuchinni)
1 cup walnut pieces
- 2 bananas mashed
- 2 cups Turbindado sugar
- 1 cup oil
- 2 teaspoons vanilla
- 3 1/2 cups whole wheat flour
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon baking powder
- 1 1/2 teaspoon salt
- 2 to 3 teaspoons cinnamon
- 2-3 cups unpeeled zuchinni (large zuchinni)
- 1 cup walnut pieces
Preheat oven to 350o. add wet ingredients and mix in a bowl until well blended.
Combine dry ingredients to wet ingredients.
Add zuchinni and nuts.
Pour into (greased) desired baking dish and bake for about an hour.
